Head Chef, Damon Porter is quickly winning plaudits for his intelligent and consuming passion for food, excellent produce and great cooking. This young dynamo is already well regarded in the Noosa restaurant community having perfected his skills working with some of the Coast’s most celebrated chefs. Damon has gone on to develop his own style, influenced by the generous warm hearted and often rustic flavours and dishes of the sunny southern climes of France and Italy.
Damon likes his food simple and tasty, letting the quality produce speak for itself. Following the comforting braised dishes of Winter, he loves Spring as it heralds the budding of new life, a sense of freshness and renewal. Spring lamb and chicken, silvery fresh fish and new season vegetables bursting with flavour; so good for the soul. Damon’s Summer dishes will be fresh and uncomplicated, pleasing to the eye and palate, dressed simply with tasty olive oils or vinaigrettes – cool sexy dining.
Every possible component of our dishes is made in our small kitchen, except of course olives, cheeses, butter and some products we consider best left in the hands of their talented makers!
